Flaco's Cuban Bakery

History

My wife and I met back in 2003 on an ultimate frisbee field. I would say that we saw each other for the first time and ran across the fields to hug and kiss. But that's not the way it went. We did immediately see that we shared a kindness toward others and a drive to be the best we could be in life. Our loving Abuela and Abuelo moved up from Miami to create the menu and run the kitchen. At the same time, we got married and had our first daughter, Phibiana. Everything was moving so fast! Flaco's was a tire shop previously, so it took some blood, sweat and tears to renovate and prepare for opening. It took 9 months, but we finally opened with one press, fridge, freezer and some other appliances. We were learning on the job for sure. Our first sandwich was made by our food rep! 15 years later, Flaco's is recognized as a landmark in the Gainesville community with great food and a relaxed atmosphere. We love our community and plan to be here for years to come! With much love, Flaco
