El Chico

El Chico Caf is a restaurant chain that specializes in Mexican cuisine. Its story began in 1926, when Adelaida Cuellar's homemade tamales drew huge crowds at a small county fair. In 1940, her sons opened a cafe in Dallas that served enchiladas prepared by using their mother's recipes. Since then, the group has grown to a chain that owns, operates and franchises more than 100 restaurants throughout the South and Canada. The chain s menu includes a variety of fajitas, tacos, burritos, desserts, appetizers and salads. Its restaurants feature a selection of wines, including cabernet, chardonnay, zinfandel and merlot. El Chico Caf s signature line of products, The Top Shelf, offers a variety of enchiladas, quesadillas and margaritas. The chain provides catering services for business meetings, family gatherings and wedding ceremonies. In addition, it offers gift cards for various occasions, such as birthdays, anniversaries, Mother s Day and Father s Day. The chain is a part of Consolidated Restaurant Operations, which operates more than 90 full-service facilities and over 25 franchises in nearly 10 U.S. states.
